- 2 medium beetroots, peeled and grated
- 2 large carrots, peeled and grated
- 2 cups of red cabbage, finely shredded
- 1/2 cup of fresh parsley, finely chopped
- 1/4 cup of sunflower seeds or pumpkin seeds for added crunch

For the Dressing:
- 3 tablespoons olive oil
