Capturing Citrus Delight: Homemade Lemon and Orange Extract

Instructions:

Step 1: Prepare the Citrus Peels

Start by thoroughly washing the lemons and oranges to remove any dirt or residue. Using a zester or vegetable peeler, carefully remove the outermost layer of the citrus fruits, ensuring to avoid the bitter white pith underneath. Aim to collect the zest from 2 lemons and 2 oranges.

Step 2: Combine Citrus Peels and Vodka

Place the citrus peels in a clean, airtight glass bottle or jar. Pour enough 80+ proof vodka over the peels to completely submerge them. The vodka will act as the extracting agent, drawing out the flavors and aromas from the citrus peels.

Step 3: Seal and Store

Securely close the bottle or jar, ensuring it is tightly sealed. Store the container in a cool, dark place, such as a pantry or cupboard. Allow the citrus peels to infuse in the vodka for a minimum of 6 to 8 weeks. During this time, the vodka will gradually take on the flavors and scents of the lemon and orange peels.

Step 4: Strain and Bottle

After the infusion period, strain the extract through a fine-mesh sieve or cheesecloth to remove the citrus peels. Transfer the homemade lemon and orange extracts into clean, airtight glass bottles or jars for storage.

Step 5: Enjoy in Recipes

Your homemade lemon and orange extracts are now ready to be used in a variety of recipes. Add them to your favorite baked goods, such as cakes, cookies, and muffins, or incorporate them into sauces, dressings, and beverages. Remember to adjust the quantity based on the strength of flavor desired.
